This is the “Fett und Zucker” (fat and sugar) – version of my beloved carrot cake. It is for Brooke, who asked for this recipe about 20 years ago. Here we go.
Carrot Cake
fills a 30x40cm pan
- 500g plain flour
- 500ml water/non dairy milk
- 200g sugar
- 200g roasted and ground hazelnuts, almonds will do as well
- 150g marge/oil
- 400g carrots, ground
- 3 tbs lemon juice
- 1 pkg. baking soda (17g)
- 2 pkg. vanilla sugar
Mix all the ingredients very well, grease the pan and bake at 200°C for about 30 minutes.

Zutaten für eine 30x40cm Backform
- 500g Mehl
- 500ml Wasser/Pflanzenmilch
- 200g Zucker
- 200g geröstete und gemahlene Haselnüsse, Mandeln kann man auch verwenden
- 150g Margarine/Öl
- 400g Karotten, gerieben
- 3 EL Zitronensaft
- 1 Pkg. Backpulver (17g)
- 2 Pkg. Vanillezucker
Zutaten gut vermischen und bei 200°C für 30 Minuten backen.
